神山の特徴は何と言っても「蒲焼きチャーシュー」。 豚バラ肉を、長時間蒸して余分な油を落とし、タレに浸けこみ、サラマンダーという焼き機で、表面をカリッと焼き上げています。中はジューシーでトロトロな新食感です。鶏ガラと豚骨を主体とした「動物系スープ」と、かつお節、煮干しでとる「魚介系スープ」の二刀流スープとの相性は最高です。 Kamiyama's most distinctive feature is, without a doubt, its "Kabayaki Chashu" (grilled pork belly char siu). We steam pork belly for a long time to remove excess fat, then marinate it in our special sauce, and finally grill its surface to a crispy finish using a salamander broiler. The inside remains juicy and incredibly tender, offering a uniquely delightful texture. This pairs perfectly with our "dual-soup" approach, which combines an "animal-based soup" primarily made from chicken and pork bones, and a "seafood-based soup" derived from bonito flakes and dried sardines.
