次世代へ繋ぐNIPPONの「食」。日本各地から取り寄せた旬の食材を和食の文化や調理法をもとに現代風へアレンジした和食「現代里山料理」。野菜は茹でる、肉は炙る、魚は蒸す。味付けは塩と醤油でシンプルに。最低限の調理法と調味料から生み出される素材本来の味が際立つ逸品をお届けします。 We are a Japanese cuisine that uses seasonal ingredients from all over Japan, arranged in a modern way based on the culture and cooking methods of Japanese cuisine. Vegetables are boiled, meat is seared, and fish is steamed. Seasoning is simple with salt and soy sauce. The minimal cooking methods and seasonings used in our dishes make poeple taste the original flavors of the ingredients. 秉持傳承至下一代的日本「食」文化。使用日本各地的新鮮食材，並以食文化和簡單烹飪方法，創作出現代風格的和食。蔬菜水煮、肉炙烤、魚蒸煮，單純使用鹽和醬油調味。通過最基本的烹飪方法和調味料， 呈現原材料本身的美味。일본 각지의 신선한 식재료를 사용하여 식문화와 간단한 조리법으로 모던 일식을 만들어냅니다. 조미료로 소금과 간장만 사용하며, 기본적인 조리법과 조미료를 사용하여 식재료 자체의 맛을 살립니다.
